Grilled Peaches with Raspberry Sauce and Lemon Cream

Raspberry sauce makes a seductive topping for these warm, beautifully caramelized peaches, but a dollop of lemon-flavored whipped cream is the pièce de résistance. A combination you could call triumphant.

For the sauce:

cups fresh raspberries or 1 twelve-ounce bag frozen raspberries, thawed

tablespoon fresh lemon juice

1

 

tablespoon tequila or raspberry liqueur (optional)

tablespoons granulated sugar

For the lemon cream:

cup heavy cream, cold

1

 

tablespoon superfine instant dissolving sugar

teaspoons finely grated lemon zest

1

 

tablespoon fresh lemon juice


For the peaches:

large peaches, firm but ripe

tablespoons unsalted butter

1/4

 

cup granulated sugar

To make the raspberry sauce: In a blender or food processor fitted with the metal blade, purée the raspberries with 1/3 cup of water. Strain purée through a fine-mesh sieve into a bowl, pressing on the pulp to extract the liquid. A few seeds may pass through the sieve and remain in the sauce. Add the lemon juice, tequila (if desired), and the sugar to taste. (Fresh raspberries will likely need the full amount of sugar; sweetened frozen berries will require less.) Stir or whisk until the sugar dissolves. Refrigerate until ready to serve.

To make the lemon cream: In a mixing bowl, mix the cream and sugar together. Whip the cream at high speed until it reaches soft peaks. Add the rest of the lemon cream ingredients and continue whipping at high speed until the cream reaches stiff peaks. Set aside in the refrigerator.

To prepare the peaches: Halve and pit the peaches; set aside. Melt the butter in a small saucepan, then add the sugar and stir until the sugar is dissolved. Remove pan from heat. Brush peach halves all over with the butter mixture.

Grill the peach halves over Direct Medium heat until they are browned in spots and warm throughout, 8 to 10 minutes, turning them every two or three minutes. Serve the peaches warm with the raspberry sauce and lemon cream.
