What color smoke do I want coming out of my pit?Ed Pawlowski--You want a light white or an invisible smoke. Even though you do not see smoke, the products of combustion are still in the air and working. Heavy dark or colored (green, yellow, orange) smoke is to be avoided at all costs.Tom Street--John Willingham says in his book - "When you think of barbecue, stop thinking of smoke. Smoke is nothing more than dirt, wafting into the air from burning wood. When the wood is properly burned at the right temperatures for barbecue, it does not smoke."
