Smoking Ribs

Method #1 for smoking Ribs

There are many ways to prepare ribs. Some say that you should boil them before throwing them on the grill or in the oven. Down south it is all about smoking at low temperatures for long periods of time. Most southerner's frown upon the "Yankee" tradition of using of tomato based sauce. Down in the Carolina's they like their mustard based sauces. The list goes on and on.


If you have the time, Smoking ribs is by far the best way to cook ribs. The flavor simply can't be beat! However, smoking can take several hours, so what do you do if you only have a couple of hours at your disposal? 


The following method will give you the best of all worlds. The ribs will be smoky, juicy, and done to perfection! The meat will literally fall off the bone.


The Method:


Use a dry rub, season heavily, refrigerate, and let marinate for 4 hour up to overnight. Remove from refrigerator 30 minute before cooking.


Cook ribs in a smoker at 200 to 225 F for 60 minutes. Remove from smoker and let cool for 15 to 20 minutes.


Wrap individual racks of ribs in plastic wrap. Make sure that it is completely sealed. Then wrap each of them in aluminum foil. Place on a baking sheet and bake at 350 F for 90 minutes. Country style ribs may have to bake a bit longer.


Remove ribs from the oven and allow them to cool while wrapped. Enjoy them as is, or add a sauce that compliments the rub that you used. If you prefer dry ribs you can also add more rub instead of sauce.


It's that simple. You get the flavor that you can only get with smoking, in one-third the time. You'll have ribs that are moist and tender, with meat that falls off the bone, without the hassles and flavor loss associated with boiling.
